Clear orange juice concentrate is produced by performing the clarification process in the clarification tanks (also called enzyme tanks). With the addition of proper bond breaking enzymes and coagulant agents, the solid particles inside (pulp) the orange juice is forced to settle down at the bottom of the tanks, and the juice remaining at the upper part is subject to further filtration (rotary vacuum filtration and/or ultrafiltration) in order to obtain the clear orange juice. Then the clarified orange juice is subject to evaporation in order to make the clear orange juice concentrate. Majority of the consumers prefer clear orange juice over the cloudy one, because of its more attractive appearance. The longer shelf stability and the ability of evaporation up to higher concentrations, are the main reasons for the clear juice being preferred by the orange juice producers.
