Orange puree is generally produced from prepared orange fruit and pulp that are refined to a controlled particle size. Compared with clarified juice, puree retains more of the fruit's natural pulp and solids, providing greater body and a fuller citrus texture alongside characteristic orange flavor and aroma.
Orange variety, maturity, growing region and processing conditions can influence natural Brix, acidity, color, aroma, pulp content and bitterness. Commercial buyers may therefore define requirements for the balance between sweetness and acidity as well as limits for peel-derived bitterness, coarse fiber, seed material and particle size.
Major industrial applications include smoothies, fruit beverages, nectars, juice blends, dairy drinks, yogurt preparations, bakery fillings, fruit preparations, sauces, dessert toppings, sorbets, frozen desserts, confectionery and citrus-based flavor systems. Orange puree can also be blended with mango, pineapple, peach, passion fruit and other fruits to provide acidity, citrus aroma and additional body.
